The vineyard stands at about 350 meters above sea-level in the historic valley of classic valpolicella: Marano di Valpolicella. Grapes are selected on a 7 hectars vineyard with historic vines: Corvina Veronese, Rondinella and Molinara. The average age of the vines is about 30 years.

Analysis:
ABV(alcohol content) 15% vol. ; total acidity 6 g/l; dry extract 30 g/l; residual sugar 4,5 g/l
Vinification:
The grapes are selected at the time of the harvest and allowed to dry for 90 days. Fermentation is in steel tanks where the must if pumped daily over the pomace for 30 days at controlled temperature.
Ageing:
36 months in tradional oak barrels of 5-25 HL and subsequently for 6 months in the bottle.
Characteristics:
of a deep garnet-red. At the nose is very intense, full-bodied, characteristic. The flavour is rich, warm, velvety with a hint of ripe fruit and brushwood.
To go with:
ideal with roast meet, stracotto, braised meat, red meat and aged cheese. If aged it’s to be served as a “meditation wine”. Serve in big glasses at a temperature of 18/20 C. It would be advisable to uncork the bottle at least an hour before serving
