Valpolicella Classico “Il Buono” Download this sheet in PDF: il-buono.pdf The vineyard stands at about 350 meters above sea-level in the historic valley of classic valpolicella: Marano di Valpolicella. Grapes are selected on a 7 hectars vineyard with historic vines: Corvina Veronese, Rondinella and Molinara. The average age of the vines is about 30 years. Analysis: ABV (alcohol content) 12% vol. ; total acidity 5,5 g/l; dry extract 30 g/l; residual sugar 2,5 g/l. Vinification: Grapes are hand picked and immediately pressed, the fermentation lasts around 10 days with daily pumping over of must. Ageing: Wine is then let to settle in steel tanks. It is bottled in the months of March/April and commercialized after 6 months of refining in the bottle. Characteristics: Of a deep, bright, ruby red. Intense at the nose with delicate cherry hints. Fresh and dry. To go with: It is a perferct match for cold cut, pasta, boiled meat and white grilled meat. To be served at 18/20 C.
