The vineyard stands at about 350 meters above sea-level in the historic valley of classic valpolicella: Marano di Valpolicella.
Grapes are selected on a 7 hectars vineyard with historic vines: Corvina Veronese, Rondinella and Molinara. The average age of the vines is about 30 years.

ABV (alcohol content) 13,5% vol. ; total acidity 6 g/l; dry extract 30 g/l; residual sugar 3,5 g/l
Grapes are hand picked and immediately pressed, the fermentation lasts around 10 days with daily pumping over of must.
In a second time the wine is let to ferment again on the pomace of amarone (ripasso) for about 8 days.
Ageing: 12 months in small barrels of 225 lt. And 6 months in the bottle.
Of a deep, strong ruby red. Delicate at the nose with red fruits and cherry hints. The flavour is dry, delicately smooth and slightly bitter.
To go with:
Ideal with the traditional “risotto” of the fall (mushrooms and radicchio), grilled meat or wild game like peccary and hare. To be served at a temperature of 18/20 C. It would be advisable to uncork the bottle at least an hour before serving.
