Valpolicella Classico “Il Buono”

The vineyard is located about 350 meters above sea level. in the historic valley of classic Valpolicella: Marano di Valpolicella. The selection of the grapes takes place on a vineyard of seven hectares with the historical vines: Corvina Veronese, Rondinella and Molinara. The average age of the vineyards is thirty years.
Technical details

Analyses:
Alcoholic degree 12% vol .; 5.5 g / l total acidity; dry extract 30 g / l; residual sugar 2,5 g / l.
Vinification:
Pressing the grapes as soon as they are manually harvested and fermentation for about ten days with daily pumping over of the must.
Refinement:
The wine is left to decant in steel tanks. It is bottled in March / April and marketed after six months of bottle aging
Features :
Bright and deep ruby ​​red. Intense bouquet with delicate hints of cherry. Fresh and dry.
Food pairings:
It goes well with cold cuts, pasta dishes, mixed boiled meats and grilled white meats. Serve at a temperature of 18/20 ° C.
